Worlds Best Beef Kebab with Homemade Slaw

 
 
 OK guys, this recipe will give you some of the best beef kebabs you have ever tasted! Ask me what the best part about these savory, delicious skewers is and wouldn't know where to start! They are sweet, they are spicy, and they are just downright good. The best part is you get to improvise, you want more heat, then add more chili flakes and dial it up, not a fan of the sweet, cut back the brown sugar. Do it how you like it, although I have to tell you they are enormously addictive just the way they are! The slaw adds a refreshing bite of acid to cut through all the sweet and heat leaving your palate begging for more, enjoy!






Prep Time- 25 min
Cook Time- 12 min
(serves 4)
Ingredients:
1.5lbs hanger steak (or skirt)- cut into1inch cubes
4 skewers

Marinade:
1/3 cup soy sauce
2/3 cup white vinegar
1/2 cup dark brown sugar
1tbsp black peppercorns
2/3 tbsp red chili flakes
2 1/2tbsp fresh chopped garlic

Slaw:
1/2 head of green cabbage(shredded)
2 scallions(minced)
1 med carrot(shredded)
1 med daikon(shredded)
1/2 tbsp rice wine vinegar (or red wine vinegar}
2tbsp sesame oil (or canola)
1/2 tsp red chili flakes
salt/pepper to taste

Procedure:
     Begin by combining all the ingredients for the marinade into a bowl. Next add the cubes of beef and set in the fridge covered from 5hrs to overnight, but no longer. When you are ready to cook take out the beef and place onto skewers. Let the kebabs sit at room temperature for a half hour before cooking.
     In a large bowl combine the ingredients for the slaw. If you are not keen one hand chopping all your ingredients you can easily buy a pre-packaged slaw at the market and use this dressing. Salt and pepper to taste and adjust the amount of chili to suit your taste.
     These kebabs are exceptional on the grill but a cast iron grill pan or any stainless steel cooking surface will do. NO NON-STICK!!! Bring the heat to med-high and cook about 2-3 minutes on each side. Now all that is left to do is enjoy! The one setback I find with these kebabs is they don't last. I can't tell you the countless times I've manned a grill at a party and when it came time to eat all my kebabs were gone!  I advise you make a few extra for such circumstances and keep them close by.
