Spice Rubbed Chicken Kebab Sandwich



        Bring home some Mediterranean flavors with this tasty chicken kebab wrap. As I've told you before in International Cuisine Basics, staring with just one spice you can begin to replicate regional flavors. A pinch of cumin in this spice rubbed chicken brings a delightful earthiness to this kebab. Eat this for a quick healthy lunch, or use it to fuel up before the gym. Healthy doesn't necessarily mean boring, give this simple, yet tasty recipe a try and I guarantee you will love it! Happy Eating!!!  


Prep Time - 15min 
Cook Time - 20min
(Serves 4)

Ingredients:
Sandwich
2 large boneless skinless chicken breasts
4 whole wheat pitas 
2 Persian cucumbers 
1 large tomato
1 lemon

Spice Rub
1/2 tsp each of:
paprika 
garlic powder
salt/pepper
1/4 tsp cumin

Yogurt Sauce 
6 oz Greek style yogurt
1/2 tsp Garlic Powder
1 small Persian cucumber (minced)
1/4 tsp salt
1/4 tsp pepper

Procedure:
     Begin by combining spice rub ingredients together. Next cut the chicken breasts in half lengthwise, and continue to cut into 1 inch cubes. Generously season the chicken with the spice mixture and then squeeze the juice of the lemon over the cubes. place onto skewers and let marinade at room temperature for 1-2hrs. 
     While chicken is marinating combine the ingredients for the yogurt sauce and set in the fridge. Take the remaining Persian cucumbers and tomato and slice thinly lengthwise. When you are ready to cook the chicken bring a grill pan to med-high heat (if you don't have a grill pan a saute pan coated with a drizzle of olive oil will do.) Cook the chicken through, about 5min per side. once finished remove and let cool for 5min.
     Lightly toast the pitas and line with the sliced cucumbers, tomatoes, and chicken pieces. Dress with cucumber yogurt sauce and enjoy!!!
